Woven from the mixture of smoke, wind and many years of experience, it has been an indispensable part of Croatian menus for centuries and a trademark of traditional Dalmatian cuisine.

Drying and smoking over selected aromatic plants gives the pancetta bacon a unique colour and aroma, transforming it into a top Dalmatian delicacy.

Compared to prosciutto, for maturation, pancetta bacon requires a shorter drying time after the salting and smoking process.

For an exceptional full-bodied taste, we make maximum use of the natural conditions during production – the bora wind for drying, smoking with white wood, and the long-term maturing of the product, in conditions inspired by those used in old wine cellars.
